This EVOO is obtained from a selection of green olives harvested at the beginning of October.
We choose the day when temperatures are expected to be lower than usual at that time of year, so that the fruit is processed under the most favourable conditions possible and thus obtain the highest QUALITY.
A very important factor in the milling process is the beating time of the olive paste. In this selection for our "First day" we considerably reduce the time of beating at low temperature, avoiding the volatilisation of the aromas coming from the olive. On the one hand we lose fat yield, but on the other hand we obtain an EVOO of great healthy and organoleptic quality.
The result is an early harvest extra virgin olive oil with a bright green tone and very particular and exclusive sensory nuances, such as its freshness or intense fruitiness. Ideal to enjoy it raw.
For our "First day" we have chosen 3 types of packaging, the largest being the 700ml bottle.
In this case, we accompanied it with a jute bag that makes it a special gift for our loved ones.
